Spring is almost here!! I am so excited! I love Spring, mostly because it leads to Summer, but it also means NO MORE WINTER! What’s your favorite season?
Today’s dish was super simple! Mr. FBBQ and I went out for Mexican last night, so I needed something light today. I’ve also never cooked asparagus, so this was a first for me! We will need a green. The recipe called for kale, but I had spinach and arugula on hand so I went with that. We will also need an avocado, a lemon, garlic, tomatoes, asparagus, and your choice of pasta. I opted for a mix of spinach pasta and red lentil and sweet potato pasta, because I haven’t used them in a while!
To start, cook the pasta and set it aside.
Next, simmer the asparagus and tomatoes in a sauce pan with water. These did not take long to soften up at all. In fact, you might want to cook the asparagus a bit before adding the tomatoes. The tomatoes cooked very quickly.
Next, we will make the sauce. In a food processor, add the garlic, the steamed greens, the avocado, and some lemon juice. Blend that up!
Now it’s time to put everything together! Use the pasta as your base. Add the green sauce and top with the veggies! Mr. FBBQ was making caramelized onions on the Blackstone, so he gave me some for this dish. They were delicious and added some great flavor to this!
