I think this might be the first asparagus recipe I’ve posted for you! This recipe was so simple and easy to make. It made a delicious dinner!

The ingredients are so simple! Baby arugula, a red onion, cannellini beans, and asparagus. If you want to make your own dressing, you will need olive oil and balsamic vinegar. I opted to use a fig vinegrette that I had in the fridge because the last time I made a dressing with olive oil it was too heavy for me. I also had baby spinach on hand that I added to my salad!

To start, grill up the red onion after dicing it. You’ll also want to steam the asparagus.

Drain and rinse the cannellini beans. You can use any bean you want, but the recipe called for cannellini beans so that’s what I used!

Use the baby arugula (and baby spinach) as a base. Add the beans and onions (once they’re cooked).

Add the cooked asparagus to the salad. Top with the dressing and you are ready to eat!!!
