Notes for the Peri-Peri, Prik Nam Pla, and Bang Bang Sauce

Ingredients
  

Peri-Peri Sauce

  • 1 Lb Thai Chiles (Bird's Eye)
  • 1 tsp Paprika
  • 1/4 Cup Basil chopped
  • 1 Lemon juiced
  • 4 Cloves Garlic
  • 1/2 Cup Cilantro chopped
  • 1/2 Cup Olive Oil
  • Salt to taste

Bang Bang Sauce

  • 1/3 Cup Mayo
  • 2 Tbsp Sweet Chili Sauce
  • 1 Tbsp Olive Oil
  • 1 Tbsp Honey
  • 1 Lime juiced

Prik Nam Pla

  • 3 Thai Chilies (Birds Eye?) Super thin slice
  • 1 Tbsp Fish Sauce
  • 1 Tbsp lime juice
  • 4 tsp Dark Brown Sugar
  • 1 Clove Garlic Fine minced

Instructions
 

Peri Peri Sauce

  • Food processor, Blend - process to consistency.

Bang Bang Sauce

  • Whisk in bowl. Mix half with the mayo (for sauce), without mayo for basting

Prik Nam Pla

  • Small bowl, whisk until sugar dissolves
