Notes for the Peri-Peri, Prik Nam Pla, and Bang Bang Sauce

Ingredients
  

Peri-Peri Sauce
  • 1 Lb Thai Chiles (Bird's Eye)
  • 1 tsp Paprika
  • 1/4 Cup Basil chopped
  • 1 Lemon juiced
  • 4 Cloves Garlic
  • 1/2 Cup Cilantro chopped
  • 1/2 Cup Olive Oil
  • Salt to taste
Bang Bang Sauce
  • 1/3 Cup Mayo
  • 2 Tbsp Sweet Chili Sauce
  • 1 Tbsp Olive Oil
  • 1 Tbsp Honey
  • 1 Lime juiced
Prik Nam Pla
  • 3 Thai Chilies (Birds Eye?) Super thin slice
  • 1 Tbsp Fish Sauce
  • 1 Tbsp lime juice
  • 4 tsp Dark Brown Sugar
  • 1 Clove Garlic Fine minced

Method
 

Peri Peri Sauce
  1. Food processor, Blend - process to consistency.
Bang Bang Sauce
  1. Whisk in bowl. Mix half with the mayo (for sauce), without mayo for basting
Prik Nam Pla
  1. Small bowl, whisk until sugar dissolves
